Bahan:
4 buah paha kalkun @ 200 gram
150 gram chestnut kalengan, iris tipis
5 gram thyme
20 gram mentega
5 gram bawang putih cincang
Sedikit garam
Sedikit lada bubuk
Balsamic Salad:
10 gram selada air (watercress) , ambil mdaun dan sedikit tangkainya
50 gram paprika merah, iris tipis
50 gram tomat, iris tipis
1 sendok the saus balsamic vinegar
3 gram bawang putih cincang
10 gram bawang Bombay cincang
1 sendok makan gula pasir
2 gram mustard Dijon
2 gram cregano
5 sendok makan minyak zaitun
Sedikit garam
Sedikit lada hitam bubuk
1 sendok teh trufle oil (jika ada)
Cara Membuat Resep Masakan Kalkun Isi Chestnut:
Sayap paha kalkun memanjang hingga terlehat tulangnya.
Gunting dengan gunting tajam hingga daging putus ke ujung tulang.
Sayat dan lebarkan paha kalkun diatas lembaran aluminium foil.
Taburi dengan chestnut.
Bubuhi dengan garam, lada dan thyme.
Gulung daging sambil dipadatkan dalam aluminium foil.
Panggang diatas api (grill) selama 10-15 menit sampai paha kalkun berwarna keemasan dan matang.
Angkat.
Buka aluminium foil.
Potong paha kalkun menjadi 4 potong.
Tata diatas piring saji.
Panaskan mentega dan bawang putiih cincang sampai mentega meleleh berwarna kekuningan.
Angkat siramkan mentega leleh diatas paha kalkun.
Saus balsamic salad:taruh winegar, bawang putih, bawang Bombay, gula pasir, mustard dan oregano, kocok dengan whisk (kocokan manual) sampai gula larut.
Tuangi minyak zaitun sedikit demi sedikit sambil dikocok sampai saus kental.
Bubuhi garam dan lada. Kocok.
Tambahkan truflle oil. Ambil sayuran dan campur dengan saus balsamic.
Tata daging kalkun yang sudah disiram mentega leleh ke piring saji.
Susun balsamic salad diatas daging. Sajikan segera. Untuk 1 porsi.
